I grew watching sci-fi and when I saw movies and shows like Star Wars or Star Trek for the first time, it fascinated me. I am 15 years old and space conquest is a passion for me since I'm a baby. I could see why some people would like this song less, but I love her voice and the overall "simpler" melody. The OST of this game is still really underrated. So maybe she's telling the tale after a few years of searching. They could travel the galaxy and not find a single drop of life. A ship traveling from star to star without knowing if they'll ever discover something. The song is simple because for us the players, the exploration ship is just that. Things simply repeat and she might feel more alone than ever before. Things have been the same for her, empty solar systems (thus the more monotone singing). She is not looking at the stars from the space around Earth, she's already far into her journey.
The song might be hopeful with a bit of sadness at the same time, because it's not the first time she's been through this. She engages the engines and goes back into FTL. She looks around for stars, in the middle of an empty solar system.

As much as they are indeed simple, they don't have to be "deep" to sound good. Some people said the lyrics were rather shallow and uninteresting.
